Here's a dessert that doesn't ask much of you but gives plenty back: fresh strawberries nestled in whipped cream, tucked inside flaky puff pastry, and finished with a drizzle of dark chocolate. Simple, elegant, and just the thing when strawberries are at their best. Ingredients
for 4 servings
- 4 fresh sole fillets, skinned and headless.
- a bunch of fresh asparagus.
- three garlic cloves.
- 1 small onion.
- 120cc dry white wine.
- one teaspoon cornstarch.
- a generous handful of chopped parsley.
- fish stock.
- salt.
- extra virgin olive oil.
Preparation
Clean the asparagus and remove the tough, woody ends, then cook them in boiling water with a pinch of salt.
In a deep skillet or casserole, heat a splash of oil and add the garlic and onion, both chopped very fine. Sauté until they're nice and soft, almost melting into the oil.
Pour in the wine and let the alcohol cook off, then stir in the chopped parsley and the cornstarch dissolved in a spoonful of stock.
Cover the pan and cook for five minutes, shaking the casserole now and then so nothing sticks to the bottom.
Place the sole fillets on top of the sauce, cook for 4 minutes, then carefully flip the fish and cook for another 4 minutes.
Serve it straight from the stove with the asparagus on the side.
