serves 4- 600g fresh spinach.
- 5 or 6 potatoes (about 1.25kg).
- 1 spring onion (100g).
- 2 garlic cloves.
- 1/2 leek.
- 600ml heavy cream (or evaporated milk).
- salt.
- ground black pepper (optional).
- 3 tablespoons extra virgin olive oil.
- 80g grated cheese (something creamy that melts well).
- 50g grated Parmesan cheese.
preparation
Start by greasing your baking dish generously with olive oil on all sides. I like using a Pyrex dish for this.Chop the spring onion, garlic, and leek, then sauté them in the olive oil for 2 to 3 minutes until softened. Pour in the cream, season with salt and pepper, cover the pan, and let it simmer gently over low heat for 5 to 6 minutes.
Take the pan off the heat and blend the cream mixture until smooth. Set it aside for now.
Rinse the spinach well, then blanch it in boiling water. Drain immediately and run it under cold water to stop the cooking. Chop it roughly and squeeze out as much water as you can. Set aside.
Slice the potatoes very thinly — a mandoline makes this easier and gets you lovely even slices.
Preheat your oven to 200°C with both top and bottom heat.
Arrange a layer of potato slices in the bottom of your prepared dish and sprinkle with a bit of salt. Next, spread the spinach evenly over the potatoes...
Then add another layer with the remaining potato slices, and give them a light sprinkle of salt too...
Pour the reserved cream sauce evenly over the top...
Cover the dish with aluminum foil and slide it into the oven for one hour.
After an hour, check that the potatoes are tender all the way through, then scatter both cheeses over the top...
Switch on the broiler and let it work its magic until you get a beautiful golden crust on top...
Bring it to the table while it's still hot...
