No-Bake Oreo Cheesecake

ingredients for the base: 160g crushed Oreo cookies. 80g softened butter. for the filling: 250g Philadelphia cream cheese. 1 Greek yogurt (like Oikos). 70g walnuts (shelled). 80g brown sugar. 50g melted butter. 1 teaspoon vanilla extract. 80g milk. 4 sheets unflavored gelatin. 120g Oreo cookies, roughly chopped. you'll also need: mixed berries (strawberries, raspberries, etc.). whole Oreo cookies. 250g strawberry jam. a 16cm diameter cake ring.   preparation To make the cake base : Crush the Oreo cookies and mix them with the softened butter. Once everything is well combined, press the mixture into the cake ring, which you've placed on the serving plate you'll use for the finished cake. Make sure to press it down firmly so you get a nice, smooth base. Pop it in the fridge while you work on the next step. Soak the gelatin sheets in cold water until they're soft. Melon and Ham Flower

Ingredients

for 4 people
  • 1/2 melon.
  • 150g Iberian ham, sliced very thin.
  • 200g peas.
  • 1 shallot.
  • salt.
  • 1 tsp sugar.
  • extra virgin olive oil.
  • caramel vinegar.
  • 8 walnuts.
  • a handful of pine nuts.

Preparation


  1. Boil the peas in water with the salt and sugar for 4 minutes. Cool them under cold water and drain well.
  2. In a pan with a few drops of oil, sauté the shallot cut into small dice, add the peas, give them a couple of tosses, and add the walnuts and pine nuts. Let everything cool.
  3. Peel the half melon and with a spoon, scoop out the seeds. Slice it into very thin rounds.
  4. Arrange the plate by making a flower shape with a hollow center using the melon slices; place the ham around the outside of the flower and the peas in the center.
Dress with salt, caramel vinegar, and olive oil. Serve freshly made.

Beet Salad with Zucchini, Asparagus, and Pear
