Mallorcan Trempó Flatbread

The weather has cooled down, and it's the perfect time to turn on the oven and bake this wonderful Mallorcan trempó flatbread.

Resources

Cost: 0.80 € per person
Preparation time: 70 minutes + rising time

Ingredients

for a 45x35cm flatbread (6 servings)

for the dough

  • - 550g bread flour.
  • - 20g fresh yeast.
  • - 300g milk at room temperature.
  • - 1 plain yogurt.
  • - 40g instant mashed potato flakes.
  • - 120ml olive oil.
  • - 1 teaspoon salt.

for the trempó

  • - 1 small red bell pepper.
  • - 2 green peppers (Italian style).
  • - 4 medium ripe tomatoes.
  • - 1 large onion.
  • - 3 garlic cloves.
  • - salt and olive oil.

Preparation

Start by making the dough. In a large bowl, dissolve the yeast in the milk, then add in this order: the oil, the yogurt, the potato flakes, the flour, and the salt. Knead well until you have a smooth dough, shape it into a ball, and let it rest in a floured, covered bowl for 1 hour, or until it doubles in size.
Meanwhile, prepare the filling. Wash and dice all the vegetables very finely. For the tomatoes, peel them first before dicing.
Season with salt and drizzle with a generous amount of olive oil, then set aside in the refrigerator...
Preheat the oven to 180ºC.
Once the dough has risen, turn it out onto a floured work surface and use a rolling pin to roll and flatten it into the shape of your flatbread.
Drain the juice that the vegetables have released and spread the filling over the dough...

Bake for 30 minutes in the oven. The dough should be lightly golden; if needed, bake for a few more minutes...
You can enjoy it fresh from the oven or at room temperature.
Enjoy!
