Why should we miss out on flan just because we have an egg allergy, lactose intolerance, or celiac disease? This flan I'm sharing has none of those ingredients, and you'll see for yourself how wonderful it turns out.
Ingredients
- 1/4 liter of almond milk.
- 50g sugar.
- 45g rice.
- A piece of lemon peel, just the yellow part.
- A pinch of cinnamon.
- Caramelized sugar.
Preparation
- Using a Thermomix, or if you don't have one, a food processor, grind the rice, sugar, and lemon peel until you get a very fine flour.
- Add the milk and cinnamon, and stir everything together until well combined. Put it on very low heat, stirring as you go, for about 12 minutes from when it starts to simmer.
- Pour the caramelized sugar into a flan mold and then add the cream mixture on top.
- Let it cool down, then refrigerate for at least 3 hours before unmolding.
