Fig, Pumpkin, Apple, and Walnut Quiche

Ingredients

  • 1 sheet of rectangular puff pastry.
  • 400 grams of pumpkin.
  • 2 apples.
  • 5 whole eggs.
  • 200 grams of goat cheese log.
  • Salt.
  • Freshly ground black pepper.
  • Oregano.
  • 8 to 10 walnut halves.
  • Fresh figs.

You'll also need:

  • 1 springform pan measuring 20x24 cm.
  • Parchment paper.

Preparation

Peel the pumpkin and slice it very thin.
Put it in a bowl with a pinch of salt and a drizzle of oil.
Cover the bowl with a plate and place a bit of water on top of the plate.
Put the covered bowl in the microwave and cook for 12 to 15 minutes. Check that the pumpkin is tender, then remove it.
Preheat the oven to 200°C, with heat from both top and bottom.
Roll out the puff pastry and place it in the pan, lined with parchment paper (the paper that comes with the pastry works perfectly).
Beat the eggs with a pinch of salt and add the goat cheese, broken into pieces.
Pour this mixture over the pastry.

Peel the raw apples and slice them thin. Arrange them over the egg mixture, alternating with the pumpkin slices.
Sprinkle with black pepper and oregano.
Cut the figs into quarters. You can leave the skin on or peel them, whichever you prefer. Place them on top of everything, along with the walnuts.
Bake for 20 to 25 minutes.
You can enjoy this quiche hot from the oven or let it cool to just warm.
I hope you enjoy it!
