Ingredients
For 4 people
- 2 round sheets of puff pastry.
- 400g heavy whipping cream, 35% fat.
- 40g powdered sugar.
- 300g cherries.
- Cherry jam.
Preparation
Preheat your oven to 180°C, with heat from both top and bottom.
Whip the cream with the powdered sugar until it forms soft peaks, then pop it in the fridge to keep it cold.
Using a pastry cutter, cut out 12 equal rounds from your puff pastry sheets.
Prick them all over with a fork, then arrange them on a baking tray lined with parchment paper, leaving a bit of space between each one.
Bake them with a weight on top so the pastry stays flat and doesn't puff up too much, letting them turn a lovely golden brown.
Take them out of the oven and let them cool completely.
To assemble your dessert, place one pastry round on each plate, spread a spoonful of cherry jam on top...
Next, place a second pastry round on top, and add more cream.
Finally, top with a third pastry round, another bit of cream, and finish with 3 or 4 cherries. You can pit them first if you like...
