Rice with Chicken and Prawns

When you're after a proper one-pot meal, nothing beats a good rice dish. Today we're making surf and turf rice! Ingredients for 4 people 500g bomba rice. 1.8 litres chicken stock. 12 prawns. 2 chicken thighs and 2 wings. 1 large onion. 2 garlic cloves. 1 green pepper (Italian style). 1/2 red pepper. 1/2 courgette. salt. extra virgin olive oil. Preparation Chop the thighs and wings into small pieces and brown them in a paella pan with 2 tablespoons of oil. Season with salt and set aside. Using the same oil, sauté the garlic and onion, finely chopped. Add the peppers and courgette cut into long strips, almost like little batons. Stir the reserved chicken back into the sofrito along with the rice. Let everything cook together for a couple of minutes, then pour in the hot stock—it should be just about to boil. Chinese Noodles with Pork Loin and Vegetables



Ingredients

for 4 people
  • 400g pork loin or tenderloin.
  • 16 large peeled prawns.
  • 300g Chinese noodles.
  • 1 leek.
  • 1 small spring onion.
  • 1 tablespoon chopped parsley.
  • soy sauce.
  • 1 small glass of white wine.
  • salt.
  • extra virgin olive oil.

for the vegetables:

  • 1 eggplant.
  • 1 zucchini.
  • 1 red pepper.
  • 1 green pepper.
  • 8 mushrooms.
  • 2 carrots.
  • 1 bunch of green asparagus.

Preparation

Wash all the vegetables and slice them into thin strips.
Salt the eggplant right away and let it rest so it releases its bitter water.
Before frying the asparagus, I like to steam them briefly first, but that's completely up to you.
Sauté all the vegetables in the pan with a bit of oil, cooking each variety separately. Season with salt, add a few drops of soy sauce, and set aside.
In a pan with a drizzle of oil, sauté the finely chopped leek and spring onion, add the white wine, and mix everything together with the reserved vegetables.
Sauté the prawns with a few drops of oil, season with salt, and set aside.
Cut the pork loin into slices about 1 cm thick, then cut each slice into two or three strips. Cook the meat on a very hot griddle with just a little oil. Season with salt and mix into the vegetable mixture.
Boil the noodles according to the package instructions, drain the water, and toss with all the sautéed ingredients.
Serve immediately at the table.
