Three Chocolate Mousse Cakes

Ingredients for 6 servings 1 sponge cake base ( recipe ). for the dark chocolate mousse 300g heavy cream (35% fat). 50g sugar. 80g dark chocolate couverture. for the milk chocolate mousse 300g heavy cream (35% fat). 50g sugar. 30g dark chocolate couverture. for the white chocolate mousse 300g heavy cream (35% fat). 50g sugar. 50g white chocolate couverture. for the gelatin layer 120g sugar. 150g water. 1 tablespoon liqueur (optional). 3 sheets of neutral gelatin.  you'll also need an 8cm diameter pastry ring or cookie cutter. chocolate balls or shavings. cocoa powder. Chicken Burger with Mashed Potatoes, Mushrooms, and Parmesan




Ingredients

for 4 people
  • 4 large chicken burgers, or 8 small ones.
  • 300gr mixed mushrooms.
  • 2 cloves of garlic.
  • mashed potatoes.
  • homemade tomato sofrito.
  • parmesan cheese shavings.
  • salt.
  • freshly ground black pepper.
  • extra virgin olive oil.

For the mashed potatoes:

  • 500gr potatoes.
  • 200gr milk.
  • 50gr extra virgin olive oil.
  • salt.
  • freshly ground black pepper.

Preparation

To make the mash: Peel the potatoes, slice them, and put them in a pot on the stove, covered with salted water.
Boil for 20 to 25 minutes, or until they're cooked through.
Drain the water and mash them with a potato masher, or with a fork. Add the warmed milk (just about to boil), and finally, the oil. Check for salt and set aside.
Spread the tomato sofrito in a baking dish that can go in the oven.
On top, add the mashed potatoes, but not all at once. Instead, flatten it and place it in portions, roughly the size of each burger...
Cook the burgers on a very hot griddle and place them on the baking dish, right on top of the mash...
Sauté the mushrooms with the two chopped garlic cloves and place them on top of the burgers...
Top with the cheese shavings...
About 10 minutes before you're ready to serve, pop it into the oven just so the cheese melts and everything warms through...
