Here's a dessert that doesn't ask much of you but gives plenty back: fresh strawberries nestled in whipped cream, tucked inside flaky puff pastry, and finished with a drizzle of dark chocolate. Simple, elegant, and just the thing when strawberries are at their best. Ingredients For 4 people 12 large strawberries. 1/2 sheet of rectangular puff pastry. 400g heavy cream for whipping (35% fat). 60g powdered sugar for whipping the cream. 75g dark chocolate (I use Nestlé Postres). 40g heavy cream (35% fat). 1 egg yolk beaten with a few drops of water. - 1 tablespoon lemon juice.
- 220g apple compote.
- 300g whole wheat flour.
- 1 packet baking powder.
- 100g extra virgin olive oil.
- 4 eggs, separated.
- 1 pinch of salt.
- 50g brown sugar.
- 1 tsp. vanilla extract.
- sliced almonds.
for the compote:
- 3 apples (400g).
you'll also need:
- 1 square pan, 22 or 23cm.
- butter for greasing the pan.
- parchment paper for lining.

To make the compote: Peel the apples, cut them into very small cubes, and steam until tender.Blend and set aside...
Grease your pan with butter and line it with the parchment paper...
Preheat your oven to 190°C, with convection if you have it, or top and bottom heat.
Peel the bananas and mash them with a fork, then mix in the lemon juice.
In a large bowl, beat the egg whites with the pinch of salt until stiff peaks form...
In another bowl, beat the egg yolks with the sugar. Add the mashed bananas, and while the mixer is running, gradually add the rest of the ingredients: the oil, the compote, the baking powder, the vanilla...
and finally the flour...
Now, gently fold this thick batter into the beaten egg whites, doing it in two or three additions. Be careful not to stir too vigorously - you want to keep all that lovely air in the whites.
Pour the batter into your prepared pan...
scatter the sliced almonds over the top and pop it in the oven.
Bake for 30 to 35 minutes. You'll know it's done when a toothpick inserted in the center comes out clean.
Take it out of the oven, turn it out of the pan, and let it cool completely on a wire rack...
