Artichokes with Iberian Ham

ingredients

for 4 people
  • 10 fresh artichokes.
  • 1 tablespoon of flour.
  • 100g of Iberian ham cut into small pieces.
  • 3 garlic cloves.
  • 80g of white part of leek.
  • two tablespoons of dry white wine.
  • 3 tablespoons of the artichoke cooking water.
  • salt.
  • extra virgin olive oil.

preparation

Peel the artichokes, cut them in half, and cover them with cold water with a handful of parsley so they don't turn black.
Put salted water and the tablespoon of flour, well dissolved, on the heat. When it boils, add the artichokes and cook them for 6 minutes.
Then drain them well and brown them on both sides in a pan or on a griddle with a few drops of very hot oil.
Cut the ham into small cubes.
In a pan with a bit of oil, sauté the garlic and leek, chopped small. When everything is soft, add the white wine and let the alcohol evaporate. Right after, add the 3 tablespoons of artichoke cooking water, the ham, and the artichokes. Give it a few turns with a spatula so everything mixes well, then remove from heat.
You can bring this to the table right away while it's hot, or serve it warm.

enjoy!
