Salmoreig or Salmorejo

Salmoreig, or salmorejo as some call it, is a cold soup that's been cooling us down for generations. You make it with raw tomatoes, bread, oil, and a splash of vinegar. Simple ingredients that somehow become something quite special when you blend them together. Ingredients for 4 people 1.5 kg ripe tomatoes. 100g bread (a day or two old works best). 1 clove of garlic (peeled, with the green shoot removed). 100ml extra virgin olive oil. 200ml cold water. 1 tablespoon white wine vinegar. salt. 4 hard-boiled eggs. serrano or ibérico ham (sliced very thin). Preparation Wash and peel the tomatoes without blanching them first. Just use a good peeler or a sharp knife. Cut out the seeds and set the flesh aside. Soak the bread in the cold water until it softens up nicely. Put the tomatoes in a large bowl along with the garlic, oil, salt, soaked bread, and vinegar. Shredded Salt Cod Salad



Ingredients

for 4 people
  • 500gr. desalted cod
  • cherry tomatoes
  • black olives
  • 1 spring onion
  • red bell pepper
  • 1 clove of garlic
  • salt
  • extra virgin olive oil

Preparation

Shred the desalted cod into small pieces with your fingers.
Dice the red pepper into very small cubes.
Slice the spring onion into thin rounds.
Crush the garlic clove and mix it with the olive oil.
Toss everything together and serve alongside the cherry tomatoes and olives.

Simple and always delicious!

Notes

To desalt the shredded cod, cover it with cold water and keep it in the fridge for three days, changing the water three times a day.

Beet Salad with Zucchini, Asparagus, and Pear

ingredients for 4 people 1 bunch of green asparagus. 2 medium zucchini. 2 pears, unpeeled. 1 or 2 ripe tomatoes. cooked black beans (or white beans work too). small chunks of cheese (whatever you fancy). toasted sliced almonds. for the dressing: juice of 1/2 lemon. freshly ground black pepper. salt. 1 tsp honey. 6 tablespoons extra virgin olive oil. preparation Start by making your dressing.
