I finally managed to make Xixona nougat, and it turned out perfect! Ingredients For one 9x21cm bar. 300g toasted and peeled almonds. 160g icing sugar. 90g white chocolate. A small piece of grated lemon zest (just a touch). You'll also need A 9x21cm nougat mold. Sunflower oil for greasing. Aluminum foil for lining. Method Grease the mold with sunflower oil and line it with aluminum foil... Before you start, get all your ingredients ready and within reach, because this comes together fast. Blitz the sugar together with the lemon zest. Add the almonds and chocolate, and keep blending until the almonds start releasing their oils, as you can see in the photo below... Turn the mixture into the mold without pressing it down. Just give it gentle taps so it settles into all the corners on its own, without packing it in... Pop it in the fridge and leave it alone for 3 to 4 days. Turn it out of the mold and enjoy! Wishing you a lovely and swe...

It's a chicken in miniature size, but when it comes to flavor, it easily beats the bigger birds. There's truth in the old saying: "Good things come in small packages."
Ingredients
for 6 people- 6 poussins.
- 1kg potatoes.
- 1 onion, sliced into rounds.
- 1/2 red bell pepper.
- 6 garlic cloves.
- salt.
- pepper (optional).
- 50gr raisins.
- 3 dried apricots, cut into 4 pieces.
- 6 pitted dates.
- 1 small Golden apple.
- 50gr smoked bacon, diced.
For the marinade
- 100cc extra virgin olive oil.
- 75cc white wine.
- juice of 1/2 lemon.
- parsley.
- 1/2 tsp soy sauce.
- a pinch of thyme and herbes de Provence.
Preparation
Mix together the marinade ingredients and set aside.The day before, rinse the poussins well, pluck out any remaining feathers, and pat them dry with a paper towel. Place them breast-side down in a baking dish, cover them with the marinade, and refrigerate for 24 hours.
The next day, carefully remove the poussins from the marinade and stuff each one from the bottom with 2 dates, 4 pieces of apple, apricots, raisins, and bacon...
Secure with a toothpick, then cross the legs and tie them together. Tuck the wings back against the body so they stay snug.
Season with salt and pepper and arrange in a roasting pan.
Preheat the oven to 200°C.
Peel the potatoes and cut each one into 6 pieces. Slice the onion and bell pepper into rounds, then add everything to the roasting pan with the poussins. Season with salt and drizzle with the marinade...
Now flip the poussins so the breast is facing down...
Pop the pan into the oven and roast for about 90 minutes. After 45 minutes, carefully turn the poussins over — take care not to break them. If the pan starts to look dry, add a bit of chicken or vegetable stock...
Absolutely delicious!
