Crispy Cream and Chocolate Pastries

ingredients for 8 pastries 2 rectangular sheets of puff pastry. 1 egg yolk. 1 rectangular cookie cutter, 10x5cm. powdered sugar for dusting. pastry cream: 400cc whole or semi-skimmed milk. 30g cornstarch. 120g sugar. 4 egg yolks. chocolate cream: 150cc heavy cream (35% fat). 120g dark chocolate (chips or chopped).   preparation First, we'll make the pastry cream : Put the milk and sugar in a pot over medium heat. In a separate bowl, whisk the egg yolks with the cornstarch. Once the milk is warm, mix it into the yolk mixture, then pour everything back into the pot. Keep stirring with a wooden spoon over low heat until the cream thickens and coats the back of the spoon. Set aside. Ravioli with Salmon and Zucchini


 

Ingredients

  • 500g four-cheese ravioli.
  • 200g smoked salmon.
  • 1 zucchini (about 500g).
  • 2 ripe, firm tomatoes (about 350g).
  • 3 tablespoons extra virgin olive oil.
  • Salt.
  • Freshly ground black pepper.
  • Chopped fresh parsley.

Preparation

Start by peeling the tomatoes and scooping out the seeds, then chop them into small dice. Sprinkle with a bit of salt and let them sit in a colander while you prep everything else. This draws out the excess water so your sauce doesn't get watery.
Dice the zucchini into small cubes, keeping them roughly the same size so they cook evenly. Cut the smoked salmon into bite-sized pieces too.
Heat the olive oil in a deep skillet over medium-high heat. Toss in the zucchini and cook for just two or three minutes until it's tender but still has a little bite. Season with salt and pepper, then stir in the parsley.
Take the pan off the heat and fold in the salmon pieces and the drained tomato dice. The residual heat will warm everything through without overcooking the delicate salmon.
Meanwhile, cook your ravioli according to the package directions. Drain well, then add the pasta straight to the skillet with your salmon and vegetables. Toss everything together gently.
Serve right away while it's piping hot.
