Ingredients for 4 people 600g ground pork. 50g bread crumbs. 150cc milk. 2 onions. 6 garlic cloves. 2 green peppers. 1 red pepper. parsley. 1 whole egg. 150cc dry white wine. 1 tablespoon vinegar (any kind except balsamic). 300cc chicken stock. flour for coating. 1 tablespoon flour. 4 artichokes. 4 potatoes. salt. freshly ground black pepper. olive oil. Preparation Put the ground pork in a bowl and mix it with the bread crumbs that you've softened in the milk, then add the egg. Season with salt and pepper, and knead everything together until the meat feels well bound and sticky. Let it rest for 4 or 5 hours in a covered bowl in the fridge. This step makes all the difference — the meat firms up and the flavors meld beautifully. Shape the mixture into meatballs, dust them lightly with flour... and fry them in plenty of hot oil until they're golden and crispy on the outside. There's something about pineapple that just hits the spot after a big lunch or as an afternoon snack. This tart is one of those recipes that looks fancy but comes together surprisingly easily.
I made this using a 28cm round springform pan, which gives it a nice size for sharing.

for 6 to 8 servings- 1 round puff pastry base.
- apple jelly to glaze the pineapple.
For the filling
- 250g canned pineapple in syrup (Del Monte).
- 3 egg yolks.
- 50g sugar.
- 20g butter at room temperature.
- juice and grated zest of one lemon.
For the meringue
- 3 egg whites.
- 1 pinch of salt.
- 1 tablespoon cornstarch.
- 2 tablespoons icing sugar.
Preparation
Roll out the pastry and press it into your pan, shaping it to fit snugly. Prick the base all over with a fork, then bake it in a preheated oven at 180°C for 15 to 20 minutes. Make sure to weigh it down with baking weights or dried beans so it doesn't puff up too much while baking.While that's happening, toss the pineapple slices into your blender—but save 4 slices for decorating later. Add the egg yolks, sugar, butter, lemon juice, and that lovely grated lemon zest. Blend everything until you get a smooth, silky cream.
Once your pastry base is golden and baked through, take it out and pour in that pineapple cream. Pop it back in the oven for another 15 minutes to let the filling set up nicely...
Remove the tart from the oven, carefully unmold it, and let it cool completely.
Once it's cooled down, time to make the meringue. Beat those egg whites with a pinch of salt until they form stiff peaks. When they're holding their shape beautifully, fold in the sugar and cornstarch. Keep beating for another 2 or 3 minutes to make sure everything's well combined.
Now for the fun part—decorating. Arrange your reserved pineapple slices on top first, then pipe the meringue into the gaps using a pastry bag. This way you get a nice pattern without the pineapple sliding around.
Slide the whole thing under the broiler for about 5 minutes to toast the meringue. Keep a close eye on it because it browns fast—one minute it's perfect, the next it's overdone.
Melt your apple jelly in a double boiler and brush it over the pineapple slices to give them a glossy finish.
Serve this one well chilled.
