This is the kind of dish you crave when winter really settles in — a proper braised beef stew that fills the house with the most wonderful smells. Ingredients For 6 people 1.5 kg stewing beef, cut into cubes. 150 g salt pork, cut into 2 thick slices. 1 large onion or 2 medium ones. 4 garlic cloves. 250 ml good quality red wine. 250 ml beef stock. 1 tablespoon tomato sofregit. 3 tablespoons flour. 18 small pearl onions. 50 ml red wine for cooking the onions. 500 g mushrooms. 50 g butter. Olive oil. Salt. 50 g sugar. Boiled rice to serve alongside. Method Trim any rind from the salt pork and cut it into 2 or 3 pieces. Put it in your casserole with just a few drops of oil over medium heat, and let it render its fat. Remove the salt pork and set aside. No proper appetizer spread is complete without patatas bravas, and today I'm sharing a version with a twist that'll really knock your socks off!
Ingredients
for 6 people- 800g potatoes
- 500g ripe tomatoes, peeled and crushed or grated
- 150g Mallorcan sobrassada
- 1 tablespoon balsamic vinegar
- chopped parsley
- 1/2 tsp sweet paprika
- 1/2 tsp sugar
- salt
- extra virgin olive oil
- allioli
Preparation
To make the sauce: Put the tomatoes in a saucepan over medium heat with a good glug of oil and the sugar.Once it's reduced a bit, stir in the paprika and vinegar, then let it cook for another 5 minutes.
Next, add the chopped parsley, the sobrassada (skinned, of course), and a pinch of salt. Stir everything together with a spatula until it's all nicely mixed, then take it off the heat and set aside.
Make your allioli and pop it in the fridge.
Rinse the potatoes but don't peel them yet. Put them in a pot, cover with cold salted water, and bring to a boil.
Let them simmer for about 30 minutes if they're large (less time if they're on the smaller side).
Let them cool down completely, then peel and cut into chunks.
Arrange the potato pieces on a baking tray, drizzle with a little oil, and sprinkle some salt over the top.
Heat your oven to 200°C, slide the tray in, and roast until the potatoes turn golden and crispy, giving them a stir now and then with a spatula.
Toss the roasted potatoes with the sobrassada sauce, and bring everything to the table with the allioli in a bowl on the side.
