Here's a bite-sized appetizer that doesn't need any bread at all! Ingredients for 4 people 4 medium potatoes. 1 onion. 30g butter. roasted red pepper and eggplant. anchovies in oil. salt. extra virgin olive oil. I've made coca flatbreads dozens of ways over the years, but never with loquats until now...
Ingredients
for 6 people- 250g bread flour.
- 2 whole eggs.
- 80g sugar.
- 150g cooked potato.
- 75g pork lard (you can use butter instead).
- 1 pinch of salt.
- 15g fresh yeast.
- 6 loquats.
you'll also need:
- 1 baking pan with high sides, about 20x30cm.
- parchment paper.
- butter at room temperature.
- powdered sugar for dusting.
Preparation
Grease your pan with butter and press the parchment paper onto it...Boil the potatoes with their skins on. Once tender, peel them, mash them into a smooth purée, and keep it warm.
Beat the eggs with the pinch of salt and sugar. Add the lard, warm potato purée, and yeast, then keep beating until everything's nicely combined.
Mix in the flour and work it with your hands to bring it all together. Shape it into a ball and tuck it into a bowl you've rubbed with a bit of olive oil. Cover it with plastic wrap...
and let it rise until it doubles in size — about an hour and a half.
Once the time's up, you'll see the dough has puffed up beautifully...
Turn it out into your prepared pan and stretch it gently with your hands to fill the pan — no rolling pin needed. The dough's a bit sticky, but that's just how it should be...
Cover it again and let it rise for another hour.
Preheat your oven to 160°C.
Peel the loquats, cut them in half, and remove the seeds. Arrange the fruit over the top of the coca, pressing down just a little so they nestle into the dough...
Slide it into the oven and bake for 30 minutes. Pull it out and let it cool completely...
Once the coca's cooled down, dust it generously with powdered sugar...
