Crispy Cream and Chocolate Pastries

ingredients for 8 pastries 2 rectangular sheets of puff pastry. 1 egg yolk. 1 rectangular cookie cutter, 10x5cm. powdered sugar for dusting. pastry cream: 400cc whole or semi-skimmed milk. 30g cornstarch. 120g sugar. 4 egg yolks. chocolate cream: 150cc heavy cream (35% fat). 120g dark chocolate (chips or chopped).   preparation First, we'll make the pastry cream : Put the milk and sugar in a pot over medium heat. In a separate bowl, whisk the egg yolks with the cornstarch. Once the milk is warm, mix it into the yolk mixture, then pour everything back into the pot. Keep stirring with a wooden spoon over low heat until the cream thickens and coats the back of the spoon. Set aside. For the chocolate cream : Heat the heavy cream in a small saucepan until it's just about to boil. Remove from heat, add the chocolate, and stir until it's completely melted and smooth. Set aside. Cod Cream with Confited Peppers





ingredients

for 4 people
  • 200g flaked and desalted cod.
  • 2 whole eggs.
  • 1 green garlic.
  • chopped parsley.
  • 1 tablespoon extra virgin olive oil.
  • 50cc heavy cream (cooking cream).
  • 50cc milk.
  • 30g cornstarch.
  • salt.
  • freshly ground black pepper.

you'll also need:

  • 10 to 12 piquillo peppers (jarred).
  • 3 garlic cloves, thinly sliced.
  • 80cc extra virgin olive oil.

to serve:

  • mixed lettuce greens.
  • black olives.


    preparation

    Drain the water from the peppers and slice them into strips.
    Put them in a pan over the heat with the oil and sliced garlic...
    Let them confit over low heat for 10 to 12 minutes. Set aside...
    To make the cod cream: Blend the cod with the milk, heavy cream, eggs, salt, and green garlic.
    Add the parsley and cornstarch, beating until there are no lumps left.
    Pour this cream into a tall saucepan and place it inside a larger pot to cook it bain-marie style on the stovetop.
    Cook while continuously whisking with a hand whisk until the cream thickens nicely.
    Spoon two dollops of cod cream into a ring mold on each plate, then add some pepper strips. Repeat with more cream and finish with the pepper strips and a few slices of garlic.
    Remove the molds and bring it to the table, warm or chilled, with a simple lettuce salad on the side...
