Cream Magdalenas

  If the super-tall magdalenas were already wonderful, just imagine these ones made with cream! Ingredients for 12 magdalenas 3 medium eggs. 175g sugar, plus a bit extra for sprinkling on top. 60g heavy whipping cream (38% fat). 190g sunflower oil. 210g pastry flour. 5g baking powder (Royal type). 1 tsp vanilla sugar. a pinch of salt. paper liners for magdalenas. Preparation   Make the batter the day before. Using an electric mixer, beat the sugar together with the eggs, the pinch of salt, and the vanilla for 5 minutes. Add the cream and the sunflower oil, then beat for another 2 minutes. Add the baking powder, mix it in, then add the sifted flour and beat for 2 or 3 more minutes. Transfer the batter into a piping bag and refrigerate for five minutes. Meanwhile, preheat the oven to 220°C with the fan on (or 220°C top and bottom heat if you don't have a fan setting). Breadcrumbs with Chorizo and Black Grapes


A hearty dish to fight off the cold! Plus, it's a brilliant way to use up bread that's gone a bit stale.



Ingredients

for 4 people
  • 500g day-old bread (two or three days old works best).
  • 50g water (to moisten the bread).
  • 8 cloves of garlic.
  • 150g red chorizo (diced very small).
  • 150g lean bacon (diced very small).
  • 100g extra virgin olive oil.
  • 1 tsp sweet paprika.
  • chopped parsley.
  • 150g black grapes.

Preparation

Crush the bread, but don't turn it into dust — you want to see the crumbs. Dampen it by sprinkling with the water, then set it aside in a bowl covered with a damp cloth.
In a deep frying pan, heat the oil and sauté the garlic — 6 cloves peeled and chopped very fine, and 2 left whole, unpeeled, just crushed.
Before the garlic has a chance to brown, toss in the chorizo, bacon, parsley, and paprika. Fry everything together, stirring constantly, for about 5 minutes.
Now add the bread and mix well with a wooden spatula so it soaks up all that lovely sofregit. Keep cooking for another 15 minutes over medium heat, stirring so the breadcrumbs turn golden and crispy.
Just before you take it off the heat, stir in the grapes — make sure they're clean — and serve right away.

Beet Salad with Zucchini, Asparagus, and Pear

ingredients for 4 people 1 bunch of green asparagus. 2 medium zucchini. 2 pears, unpeeled. 1 or 2 ripe tomatoes. cooked black beans (or white beans work too). small chunks of cheese (whatever you fancy). toasted sliced almonds. for the dressing: juice of 1/2 lemon. freshly ground black pepper. salt. 1 tsp honey. 6 tablespoons extra virgin olive oil. preparation Start by making your dressing. Let them cook for about 4 minutes, then pull them out and plunge them straight into plenty of cold water to stop the cooking. Set them aside. Now for the zucchini. Give them a good wash, then use a mandoline to slice them into thin ribbons like tagliatelle. If you don't have one, a vegetable peeler does the trick just fine...
