ingredients for two people 400g swiss chard stalks. 6 to 8 calçots. one large cuttlefish (around 400g). 3 tablespoons home-cooked beans. 80ml dry white wine. fish stock. salt. plenty of black pepper. extra virgin olive oil. you'll also need: a handful of parsley. a handful of mixed nuts (walnuts, almonds, hazelnuts). 1/2 tablespoon cornstarch. preparation Wash the swiss chard stalks and cut them into pieces about two or three fingers wide. Cook them in salted water until they're tender, then drain and set aside. Rinse the cuttlefish, cut it into chunks, and cook it in a deep skillet with 4 tablespoons of oil. When it starts to sizzle and pop, take it out of the pan. Peel the calçots and cut them into pieces about four fingers long. Sauté them in the same pan where you cooked the cuttlefish, using the oil that's left behind. Once they've softened nicely, pour in the white wine and let the alcohol cook off. Ingredients
for 4 people
- two red bell peppers.
- two sweet onions.
- two zucchini.
- grated Parmesan cheese.
- salt.
- freshly ground black pepper.
- extra virgin olive oil.
Preparation
Wash the peppers well and remove the seeds and white membranes from inside.
Slice them into rounds that aren't too thick, then place them in the air fryer basket. Sprinkle with salt and drizzle with a bit of oil.
Set the air fryer to 180°C for 12 minutes. Give them a good stir a couple of times while they cook. If they're not quite done after 12 minutes, just add a few more minutes until they're tender.
Take them out of the basket and transfer to an oven-safe dish.
Next, peel the onions and slice them into thin rounds. Cook them the same way you did the peppers.
Once they're cooked through, add them to the dish on top of the peppers.
Slice the zucchini into rounds as well, and cook them in the air fryer using the same method.Once they're done, layer them on top of everything else in the dish.
Sprinkle some black pepper over the vegetables.
