Ingredients
for 4 servings- watermelon (well chilled from the fridge).
- 200g mixed raisins - white, pink, and black.
- 16 shelled walnuts.
- fresh cheese.
- basil (you can swap this for parsley if needed).
- flaky sea salt.
- 80ml extra virgin olive oil.
Preparation
Cut the watermelon into slices, then remove the rind and pick out any seeds. Cut the flesh into triangles.Slice the fresh cheese into rounds, then cut those into triangles to match the watermelon.
Chop the basil leaves finely and mix them with the olive oil.
Arrange the salad on individual plates - layer the watermelon pieces, cheese triangles, raisins, and walnuts however you like.
Finish with a sprinkle of flaky salt and drizzle over that basil oil. Serve right away while everything's still cold and crisp.
