Or, if you've got a mandoline like I do, use the spiral attachment to make those lovely ribbon curls... Get your oven going at 200°C (about 400°F). Drizzle a little olive oil across the bottom of an oven-safe baking dish. Lay down half of your potato spirals first, then tuck in all those red pepper strips. Give it a good sprinkle of salt and a few grinds of black pepper if you're using it... Next, layer on your zucchini and carrot spirals. Season this layer too, but go a bit...

for 4 pinwheels- 1 square sheet of puff pastry.
- 150g angel hair jam.
- 1 egg yolk beaten with 1 tablespoon of milk.
Preparation
Preheat your oven to 189°C.Roll out the puff pastry and cut it into 4 squares.
On each square, make cuts from each corner toward the center, but don't let them meet in the middle. Brush with the egg yolk beaten with milk...
spoon the jam onto the center, then fold the four cut corners toward the middle, as you see in the photo. It helps to practice with a paper pinwheel first if you're not sure how to fold them...
brush the pastry again with egg and bake until golden brown...
