Sweet Ham and Cheese Muffins

Ingredients

  • 200g bread flour.
  • 100g all-purpose flour.
  • 120g skim milk (lukewarm).
  • 50g sugar.
  • 1/2 tsp salt.
  • 1 whole egg.
  • 40g olive oil.
  • 15g fresh yeast.

you'll also need:

  • muffin tins.
  • 1 beaten egg for brushing.
  • slices of melting cheese (like American cheese slices).
  • 150g cooked ham.

Preparation

In a bowl, dissolve the yeast in the lukewarm milk. Add the sugar, whole egg, salt, and both flours, mixing as you go. Finally, pour in the oil and keep kneading until you get a manageable dough. You can do this in a bread machine, stand mixer, or by hand.
Shape it into a ball and let it rest in a bowl greased with olive oil, covered with plastic wrap, until it doubles in size.
Once the dough has risen, preheat your oven to 180°C.
Turn the dough out onto a floured work surface and divide it into portions of about 20g each, shaping them into small balls...
Flatten each piece of dough to about the size of a cheese slice. Place a slice of cheese and an equal-sized piece of ham on top of each one...
Roll it up and slice it into three pieces, just like you see in the photo...
Stand the three pieces upright in the muffin tins (if you're using silicone or paper liners, no need to grease them)...
Brush each muffin with beaten egg and pop them in the oven. Bake until the tops turn a nice golden brown.
Take them out of the oven, remove from the tins, and let them cool on a wire rack...
