This is the kind of dish you crave when winter really settles in — a proper braised beef stew that fills the house with the most wonderful smells. Ingredients For 6 people 1.5 kg stewing beef, cut into cubes. 150 g salt pork, cut into 2 thick slices. 1 large onion or 2 medium ones. 4 garlic cloves. 250 ml good quality red wine. 250 ml beef stock. 1 tablespoon tomato sofregit. 3 tablespoons flour. 18 small pearl onions. 50 ml red wine for cooking the onions. 500 g mushrooms. 50 g butter. Olive oil. Salt. 50 g sugar. Boiled rice to serve alongside. Method Trim any rind from the salt pork and cut it into 2 or 3 pieces. Put it in your casserole with just a few drops of oil over medium heat, and let it render its fat. Remove the salt pork and set aside. Ingredients
for 6 people- 3 prawns per person.
- 500g of crabs and mantis shrimp (mixed).
- the heads and shells from the prawns.
- 500g of rock fish, monkfish head, etc.
- 1/2 leek.
- 1 large onion.
- 2 carrots.
- 80cc of dry white wine.
- 400g of potatoes (cleaned and peeled).
- salt.
- extra virgin olive oil.
Preparation
Peel the prawns and set the tails aside, keeping them separate from the heads and shells. Use a toothpick to remove the intestinal vein from each tail.Put a large pot on the stove with a good glug of oil, then add the onion, carrots, and leek, all cut into large chunks.
Let everything sauté for about 10 minutes, then add the rock fish, prawn heads and shells, crabs, and mantis shrimp. Give it all a good stir so the fish gets some color.
Pour in the white wine and let it evaporate for a few minutes, then add about 2 liters of water.
Let it simmer for an hour over medium heat. Add salt to taste.
Strain the stock, pressing down on the fish and shellfish to squeeze out every last bit of flavor.
Put the strained stock back on the heat. Add the peeled potatoes, broken into chunks, and boil until the potato is completely soft. Check the seasoning and blend until smooth.
Cook the prawn tails on a very hot griddle, season with salt, and divide them among the bowls where you'll serve the piping hot cream soup at the table.
