I highly recommend making these crispy leek fritters. No one will guess what they're eating until you tell them. They come out wonderfully crisp and flavorful—the name says it all. Ingredients for 4 people 500g ground meat (beef, pork, chicken...), your choice. 250ml milk. 2 heaping tablespoons flour. 1 onion. 1 whole egg. salt and pepper (optional). olive oil. Ingredients
For 4 glasses
- 500g plain yogurt (unsweetened).
- 400g raspberries (or other red berries).
- Juice of one orange.
- 1 level tablespoon brown sugar.
- Ground cinnamon.
- 3 tablespoons honey.
- 250g whipping cream beaten with 20g icing sugar.
Preparation
Put the yogurt in a glass bowl along with the 3 tablespoons of honey and a pinch of cinnamon.
Mix well and pop it in the fridge.
Whip the cream with the icing sugar until stiff peaks form. Set aside.
Place the raspberries in another bowl with the orange juice and brown sugar.
Let them sit in the fridge for about 10 minutes.
To assemble the parfaits, divide the yogurt cream evenly among the four glasses.
Add the raspberries on top (save 4 for garnish) along with a bit of the macerating juice.
Pipe a rosette of whipped cream on top using a pastry bag, then place a raspberry right in the center.
Finally, dust everything with a touch of cinnamon.
