This is the kind of dish you crave when winter really settles in — a proper braised beef stew that fills the house with the most wonderful smells. for 6 people- 4 large paraguayan peaches.
- 70g all-purpose flour.
- 50g cornstarch.
- 70g sugar.
- 60g olive oil.
- 1/2 yogurt (60g).
- 1 whole egg.
- 1 pinch of salt.
- 1 tsp. baking powder.
you'll also need
- apple jelly for glazing.
- 1 cake pan, 20cm diameter.
- butter for greasing.
- flour for dusting.
- parchment paper.
Preparation
Grease your pan with butter, line it with parchment paper, and butter that too. Dust everything with flour and tap out the excess.Peel the peaches, cut them in half, and scoop out the pits with a knife or a melon baller.
Preheat your oven to 180°C.
Slice the peaches thinly. Pour the batter into the prepared pan.
Arrange the peach slices in a spiral pattern, starting from the outer edge and working your way toward the center until the whole surface is covered.
Bake for about 30 minutes. Since ovens vary, test with a toothpick to make sure it's cooked through — if it needs more time, keep it in a bit longer. Once the cake is golden and set, take it out and brush the top with the apple jelly that you've melted in a double boiler.
Let it cool before serving — if you can wait that long!

- Place the egg, salt, and sugar in the Thermomix bowl with the butterfly attachment, and set for 4 minutes, 37°C, speed 3.5.
- Remove the butterfly, add the yogurt, and mix for 1 minute, no heat, speed 3.5.
- Sift the flour with the baking powder, add to the bowl, and program 1 minute, no heat, speed 5.
- Add the oil and mix for 2 minutes, no heat, speed 5.
- Pour the batter into the pan and continue with the recipe as described.
