Orange Crepes with Banana and Chocolate

This is the kind of dessert that really brightens up the table!

Ingredients

for 6 people

for the crepes:

  • 125g cake flour.
  • 3 whole eggs.
  • 275g whole milk.
  • 1 pinch of salt.
  • zest of 1 orange, grated.
  • 30g olive oil.
  • 15g sugar.
  • 1 tablespoon of Grand Marnier.
  • butter for cooking the crepes.

for the filling:

  • 4 large bananas, ripe but firm.
  • 30g butter.
  • 100g dark chocolate (for melting).
  • 125g heavy cream (35% fat).

Preparation

Let's start with the crepes: in a tall bowl, whisk together all the ingredients until you have a very smooth batter.
Heat up your crepe pan or a regular skillet and pour in two spoonfuls of batter. Quickly tilt and rotate the pan so the batter spreads evenly across the entire base. You need to work fast here - this batter cooks in no time.
Once the crepe is cooked on one side, flip the pan and give it a quick, sharp flick so the crepe lands on your spatula. Then slide it back into the pan to cook the other side. Transfer to a plate when done.
Keep making the rest of the crepes, adding a little knob of butter to the pan for each one. If you'd like to see step-by-step photos of the whole process, you'll find the detailed recipe here.
Slice the bananas into rounds about 1.5cm thick, and fry them in the butter.
To make the chocolate cream, put the heavy cream and grated chocolate in a small saucepan over the heat. Stir constantly until the chocolate has completely melted into the cream.
On one quarter of each crepe, arrange some banana slices and drizzle with the chocolate sauce.
Fold the crepe over itself and add more banana and chocolate.
Fold the crepe again so it forms a triangle, then drizzle more chocolate over the top and around the edge of the plate.
Mmmmm...

Enjoy your dessert!
