A simple, healthy starter that makes the most of spring asparagus.

Ingredients
for 4 people- 3 bunches of green asparagus.
- 4 hard-boiled eggs.
- 2 large salad tomatoes.
- salt.
- olive oil.
Preparation
Rinse the asparagus and trim off the tough ends, then steam them for 10 to 12 minutes. Let them cool completely.Boil the eggs until hard-cooked, then cool them in cold water and peel.
Wash the tomatoes and dice them into small cubes.
To assemble each plate, arrange a bed of asparagus in the center. Place the diced tomato at each end, then grate one egg over the asparagus on each plate.
Season with salt and drizzle with olive oil.
Serve right after dressing, nice and chilled.
