Give it a good sprinkle of salt and a few grinds of black pepper if you're using it... Next, layer on your zucchini and carrot spirals. Season this layer too, but go a bit...

- one round sheet of puff pastry.
- fresh figs.
- sliced almonds.
- a springform pan, 25x28cm.
for the filling:
- 100g almond flour.
- 60g melted butter.
- 60g powdered sugar.
- 180g heavy cream.
- one whole egg.
- one tablespoon sugar.
- two tablespoons ratafia (or another nut liqueur).
- vanilla extract.
preparation
Heat your oven to 180ºC, with heat from both top and bottom.
Roll out the puff pastry on parchment paper and place it in the pan. Trim off any excess dough hanging over the edges.
Prick the pastry all over with a fork, then lay another sheet of parchment on top and add a weight—this keeps it from puffing up too much while it bakes...
Pop it in the oven and bake for 15 minutes.
While that's baking, let's make the filling: In a bowl, mix together the melted butter, almond flour, and powdered sugar...
In a separate bowl, whisk the egg with the vanilla extract, tablespoon of sugar, and ratafia...Fold this into the almond mixture you made earlier...Then pour it over the pre-baked pastry.
Arrange the figs—cut into quarters—and scatter the sliced almonds on top...
Return it to the oven and bake for another 35 to 40 minutes, until the filling is set and the top is golden brown...Enjoy your dessert!
