Cream Cheese and Strawberry Jam Cake

  Ingredients 470g cream cheese (Philadelphia-style works perfectly). 100g Greek yogurt. 4 whole eggs. 250g white sugar. 1 teaspoon vanilla extract. 1 pinch of salt. 3 tablespoons strawberry jam. For the biscuit base: 220g digestive biscuits (or Maria biscuits if you prefer something milder). 100g butter at room temperature. You'll also need: 1 round cake tin, 24cm diameter. Parchment paper for the base. Butter for greasing. Method Grease your tin generously with butter and line the bottom with parchment paper. Next, crush the biscuits until they're fine crumbs, then mix them with the softened butter until everything comes together into a moist, sandy mixture. Chocolate Cream and Puff Pastry Rings




ingredients

for 24 small rings
  • 1 sheet of rectangular puff pastry.
  • chocolate hazelnut spread.
  • 1 egg yolk for brushing.

preparation

Roll out the puff pastry, keeping it on the parchment paper it came wrapped in, then slice it lengthwise into three long rectangles.
Separate them a bit so you have room to work.
Spread each strip generously with chocolate hazelnut spread.
Now roll each strip up lengthwise, then make one long cut down the middle without slicing all the way through, so the two halves stay attached at the bottom.
Gently pull it apart and cut each roll into 8 pieces.
With your fingers, twist each piece into a ring shape, bringing the ends together and pinching them to seal.
Brush them with the egg yolk beaten with a few drops of water.
Place the rings on a baking sheet lined with parchment, leaving space between them since they'll puff up in the oven and stick together if they're too close.
Pop them in the fridge while the oven heats to 180°C.
Once the oven's hot, bake the rings until they're beautifully golden brown.
