Salmoreig, or salmorejo as some call it, is a cold soup that's been cooling us down for generations. You make it with raw tomatoes, bread, oil, and a splash of vinegar. Simple ingredients that somehow become something quite special when you blend them together. Ingredients for 4 people 1.5 kg ripe tomatoes. 100g bread (a day or two old works best). 1 clove of garlic (peeled, with the green shoot removed). 100ml extra virgin olive oil. 200ml cold water. 1 tablespoon white wine vinegar. salt. 4 hard-boiled eggs. serrano or ibérico ham (sliced very thin). Preparation Wash and peel the tomatoes without blanching them first. Just use a good peeler or a sharp knife. Cut out the seeds and set the flesh aside. Soak the bread in the cold water until it softens up nicely. Put the tomatoes in a large bowl along with the garlic, oil, salt, soaked bread, and vinegar. These playful little marzipan mice are perfect for decorating cakes, and the kids will have a wonderful time helping you make them. The dough works just like modeling clay, so even the smallest hands can join in the fun.
Ingredients
- 100g almond flour.
- 100g superfine sugar (the finer, the better).
- 1 small egg white.
- Chocolate sprinkles for the whiskers.
- Dark chocolate.
Preparation
- Mix the almond flour with the superfine sugar. Beat the egg white lightly and add about half of it to start. If the mixture seems too dry, add a bit more. You want a dough that's easy to handle and doesn't stick to your fingers.
- Divide your dough into three portions: one large piece that you'll keep white for the mice bodies, a medium piece for the ears and tails, and a very small piece for the eyes and nose. If you prefer, you can skip making the eyes and nose from paste and use tiny chocolate chips instead.
- Take your large ball of white paste and shape it into little bodies. I like to form them into pear shapes – fat on one end, tapering toward the other.
- Melt a piece of dark chocolate in a double boiler with just a few drops of water until it's smooth.
- Work some of the melted chocolate into your second portion of paste, kneading it through until you get the color you're after. This will be for the tails and ears, so you want a nice medium brown.
- For the third portion, add quite a bit more chocolate and knead well until the paste is nearly black. Roll this into very tiny balls for the eyes and nose.
- Now comes the fun part – attach the tails, ears, eyes, and nose to each little mouse body. Press them gently so they stick.
