- two sheets of round puff pastry.
- 3 Conference pears.
- 1 tablespoon of sugar.
- apple jelly for glazing the fruit.
for the custard cream:
- 500cc whole milk.
- 6 egg yolks.
- 40g cornstarch.
- 150g sugar.
you'll also need:
- 6 round tart tins about 8cm in diameter.
- parchment paper.
Preparation
Peel the pears, cut them in half, and remove the cores with the seeds.
In a saucepan, poach them covered in water with the tablespoon of sugar for about 3 minutes. Remove them from the water and let them cool down.
To make the custard cream: warm the milk with the sugar.
In a bowl, whisk the egg yolks and cornstarch until completely smooth with no lumps. When the milk is just about to boil, take out a ladleful and mix it into the yolks. Pour this mixture back into the rest of the milk and, using a hand whisk, stir vigorously. Don't let it boil — take it off the heat just before and keep whisking for another two minutes off the stove. This way you'll get a really silky cream. Set it aside to cool...

Roll out the puff pastry and cut it into rounds slightly larger than your tins.

Fill the pastry shells with the custard cream, making sure it's nice and cold.Slice the pear halves thinly.
