This is the kind of dish you crave when winter really settles in — a proper braised beef stew that fills the house with the most wonderful smells. Ingredients For 6 people 1.5 kg stewing beef, cut into cubes. 150 g salt pork, cut into 2 thick slices. 1 large onion or 2 medium ones. 4 garlic cloves. 250 ml good quality red wine. 250 ml beef stock. 1 tablespoon tomato sofregit. 3 tablespoons flour. 18 small pearl onions. 50 ml red wine for cooking the onions. 500 g mushrooms. 50 g butter. Olive oil. Salt. 50 g sugar. Boiled rice to serve alongside. Method Trim any rind from the salt pork and cut it into 2 or 3 pieces. Put it in your casserole with just a few drops of oil over medium heat, and let it render its fat. Remove the salt pork and set aside. Ingredients
for 4 servings- 4 slices of goat cheese log.
- 2 large apples.
- 4 slices of sandwich bread.
- butter at room temperature.
- oak leaf lettuce.
- escarole.
- black olives.
for the vinaigrette
- 3 strawberries.
- 4 tablespoons of balsamic vinegar.
- 10 tablespoons of olive oil.
- freshly ground black pepper.
- salt.
Preparation
Rinse and dry the greens, then pop them in the fridge to stay crisp.To make the vinaigrette, chop the strawberries into small pieces. Put them in a bowl with the other ingredients, whisk everything together until it comes together nicely, and set aside.
Using a cookie cutter, cut the sandwich bread into circles roughly the same size as your cheese slices.
Spread butter on both sides of the bread rounds and toast them in the oven until golden on both sides.
Peel the apples, scoop out the cores, and slice them into rounds about 2cm thick. Cook them on both sides in a pan with a bit of butter and a splash of oil until they're tender and lightly caramelized.
Preheat your oven to 190°C.
Arrange the toasted bread rounds on a baking sheet, top each one with a slice of the cooked apple, and then place a round of goat cheese on top.
Serve right away while everything's still warm.
