Crispy Cream and Chocolate Pastries

ingredients for 8 pastries 2 rectangular sheets of puff pastry. 1 egg yolk. 1 rectangular cookie cutter, 10x5cm. powdered sugar for dusting. pastry cream: 400cc whole or semi-skimmed milk. 30g cornstarch. 120g sugar. 4 egg yolks. chocolate cream: 150cc heavy cream (35% fat). 120g dark chocolate (chips or chopped).   preparation First, we'll make the pastry cream : Put the milk and sugar in a pot over medium heat. In a separate bowl, whisk the egg yolks with the cornstarch. Once the milk is warm, mix it into the yolk mixture, then pour everything back into the pot. Keep stirring with a wooden spoon over low heat until the cream thickens and coats the back of the spoon. Set aside. For the chocolate cream : Heat the heavy cream in a small saucepan until it's just about to boil. Remove from heat, add the chocolate, and stir until it's completely melted and smooth. Set aside. Pig's Trotters with White Beans



 

Ingredients

for 4 people
  • 4 pig's trotters split lengthwise.
  • 2 large onions.
  • 2 garlic cloves.
  • 5 ripe tomatoes.
  • 100cc rancio wine.
  • 500g cooked white beans.
  • the cooking liquid from the beans.
  • salt.
  • freshly ground black pepper.
  • extra virgin olive oil.
  • flour.

for the picada:

  • 1 garlic clove.
  • 25 or 30 toasted almonds.

Preparation

Ahead of time, cook your white beans - you can find instructions on how to do it properly here.
Put the pig's trotters in a pot, cover them with water, and add one of the onions. Salt the water and boil until the meat is completely tender and falling off the bone.
Once they've cooled enough to handle but aren't completely cold, carefully debone the trotters and pick out all the meat. Pat the meat dry, dust it with flour, and fry in a pan with olive oil until golden.
In an earthenware casserole (or a good cast iron pot if that's what you have), use the same oil from frying the trotters to make a sofrito with the remaining onion and garlic, everything chopped small. Add the peeled and grated tomatoes and let it all cook down properly. Season with salt.
Pour in the wine, let it bubble away and reduce, then stir in the beans...
Let everything simmer together for about 10 minutes. Then add the fried trotters and the picada, taste and adjust the salt and pepper. Cook for another 10 minutes and take it off the heat.
That's it - ready to serve...
