Potato, Anchovy, and Roasted Vegetable Canapé

Here's a bite-sized appetizer that doesn't need any bread at all! Ingredients for 4 people 4 medium potatoes. 1 onion. 30g butter. roasted red pepper and eggplant. anchovies in oil. salt. extra virgin olive oil. Preparation To roast the pepper and eggplant, you can see how to do it here . Set them aside when done. Slice the onion into thin strips and sauté it with the butter and a few drops of oil until it caramelizes nicely. In a large pot, place the whole potatoes, scrubbed clean but with their skins on, and cover them with cold water. Add salt and bring to a boil, then let them cook for about 30 minutes. Once they're cooked, let them cool completely before peeling and slicing them into rounds about 1 to 1.5 centimeters thick. Cuban-Style Rice with Squid




This is a different take on Cuban-style rice, a complete one-dish meal that everyone will love.

Ingredients

for 4 people

  • 250g rice.
  • 4 eggs.
  • 1 large squid (about 750g).
  • 8 mini bananas or 4 regular ones.
  • Homemade tomato sofrito.
  • 3 blanched garlic cloves.
  • parsley.
  • Butter.
  • Olive oil.
  • Salt.


Preparation

Blanch the garlic by putting it in cold water and bringing it to a boil. Repeat this process 3 times, then let it cool. Chop the blanched garlic and parsley very finely. Set aside.
Cut the squid into thin strips...
then put them in a pan with oil and fry for about 25 minutes. Add salt and stir in the garlic and parsley.

Boil the rice, rinse it with cold water, and place it on the plates using a square mold or round ring.

Fry the bananas in a pan with a few drops of oil and butter. If they're mini bananas, you can cook them whole; if they're regular size, cut them into pieces. Put 2 or 3 on each plate.
Fry the eggs.
On each plate, right on top of the rice mold, place a fried egg and the squid with its cooking oil. Arrange the bananas on the side and finish with a spoonful of tomato sofrito...

You can serve this dish warm, but always fry the eggs right before serving.
