Blitz the sugar together with the lemon zest. Add the almonds and chocolate, and keep blending until the almonds start releasing their oils, as you can see in the photo below... Turn the mixture into the mold without pressing it down. Just give it gentle taps so it settles into all the corners on its own, without packing it in... - Grease your pan with butter and line the bottom with parchment paper.
- Heat your oven to 180°C, on fan setting or conventional heat (top and bottom).
- Melt the grated dark chocolate and the diced butter together until completely smooth.- Let this cool down a bit while you work on the rest.
- Beat the two eggs with the pinch of salt and the sugar until they're nice and foamy and have doubled in volume, then slowly fold in the melted chocolate and butter mixture.
- While that's happening, grind the 170g of walnuts into a coarse powder.- In a separate bowl, mix together the flour and cocoa with the ground walnuts, then fold this into your egg and chocolate mixture until everything's well combined.
Now add the peeled figs, mashing them with a fork as you go.
- Use a spatula to mix everything gently but thoroughly.
- Stir in the whole walnuts and pour the whole mixture into your prepared pan.
- Slide it into the oven and bake for 30 minutes.
