I highly recommend making these crispy leek fritters. No one will guess what they're eating until you tell them. They come out wonderfully crisp and flavorful—the name says it all. - Cream cheese filling.
- A round springform pan (26/28cm).
- Parchment paper.
- Apple jelly.
For the shortcrust pastry:
- 70gr ground pistachio flour (crushed pistachios).
- One whole egg.
- A pinch of salt.
- 100gr powdered sugar.
- 150gr butter.
- 250gr sifted cake flour.
For the cream cheese filling:
- 3 whole eggs.
- 100gr sugar.
- 30gr sifted cornstarch.
- 250gr Philadelphia cream cheese.
- 150gr fresh cheese (mató).
- One teaspoon vanilla extract.
Preparation
- Line the pan with parchment paper. If you dampen it first, it'll fit much better into the mold.
- Make the shortcrust pastry: Mix the pistachio flour with the sifted cake flour and powdered sugar.- Add the cold butter cut into very small cubes, the beaten egg, and the pinch of salt.
- Knead it all together into a ball and let it rest, covered, in the fridge for 15 minutes.
- After 15 minutes, roll it out and press it into the pan.

- Prick it all over with a fork and put it back in the fridge while you prepare the filling and preheat the oven to 180ºC, with fan or top and bottom heat.
