Crispy Leek Fritters and Hamburgers

I highly recommend making these crispy leek fritters. No one will guess what they're eating until you tell them. They come out wonderfully crisp and flavorful—the name says it all. Ingredients for 4 people 500g ground meat (beef, pork, chicken...), your choice. 250ml milk. 2 heaping tablespoons flour. 1 onion. 1 whole egg. salt and pepper (optional). olive oil. Spicy Chicken with Peppers


Ingredients

For two people
  • Two chicken leg quarters (thigh and drumstick).
  • 120cc of brandy or cognac.
  • One red pepper.
  • One green pepper.
  • Three ripe, firm tomatoes.
  • One small hot pepper.
  • 4 garlic cloves.
  • Meat broth.
  • Salt.
  • Plenty of black pepper.
  • Extra virgin olive oil.

Preparation

Heat a splash of oil in a pot and brown the chicken leg quarters, cut in half...
Set the chicken aside and deglaze the pot with the brandy, letting the alcohol evaporate. Reserve the caramelized bits from the pot along with the chicken.
Wash the peppers, remove the seeds and white membranes inside, then cut them into strips about a centimeter wide.
Peel and slice the garlic cloves.
Add another splash of oil to the pot and sauté the garlic and peppers.
Next, peel the tomatoes, remove the seeds, cut them into large chunks, and add them to the sofrito along with the hot pepper.
Continue cooking for another five minutes.
Return the chicken to the pot along with any juices we saved. Add a ladle or two of broth, cover, and cook over low heat for 45 minutes. Add more broth if needed.
After 45 minutes, the chicken will be perfectly cooked. Bring it to the table right in the pot, and you can serve it with a rice mold on the side.
