Baked Custard Crescents

Ingredients For the dough: Makes 15-16 pastries 300g all-purpose flour. 120g warm water. 30ml sweet anise liqueur. 90g extra virgin olive oil. 1/2 teaspoon salt. 1/2 tablespoon sugar. 5g dry yeast. For the custard: 300ml milk (or any plant-based milk like soy, oat, or almond). 3 large egg yolks. 90g sugar. 30g cornstarch. You'll also need: 1 beaten egg for brushing. Sugar for sprinkling. Parchment paper.   Preparation To make the custard : Heat the milk with the sugar over medium heat. In a bowl, whisk together the egg yolks and cornstarch until completely smooth with no lumps. When the milk is just about to boil, scoop out a ladleful and stir it into the yolk mixture to temper it. Pour this mixture back into the rest of the milk. Using a hand whisk, stir vigorously—this custard thickens fast and won't wait for you. Don't let it boil. Mandarin and Olive Oil Cake



Ingredients

  • The juice of 3 mandarins, strained (about 180gr).
  • 200gr sugar.
  • Zest of one mandarin.
  • One whole egg plus two extra yolks.
  • A pinch of salt.
  • 100gr extra virgin olive oil.
  • One Greek yogurt (110gr).
  • 250gr pastry flour.
  • 15gr baking powder.

You'll also need:

  • Powdered sugar for dusting.
  • A 22cm round cake pan.
  • Parchment paper for the base.
  • Butter for greasing.

Preparation

- Grease your cake pan with butter and line the bottom with parchment paper.
- Preheat the oven to 180ºC, with fan or top and bottom heat.
- Wash the mandarins thoroughly.
- Peel one mandarin, being careful not to get any white pith (it makes things bitter).
- Blend the sugar with this peel and set it aside.
- Squeeze the mandarins until you have about 180gr of strained juice.
- In a mixing bowl, combine the whole egg, the extra yolks, a pinch of salt, and the sugar mixture you set aside, and beat everything until it increases in volume.
- Add the olive oil, mandarin juice, and yogurt, and once it's well combined, fold in the flour and baking powder that you've sifted together.
- Pour this batter into your prepared pan.
- Bake for 45 minutes, checking that the cake is cooked through in the center. Remove from the pan and let it cool completely on a wire rack.
- Once it's completely cooled, dust generously with powdered sugar and bring it to the table.
- You'll end up with a wonderfully moist cake.
