I highly recommend making these crispy leek fritters. No one will guess what they're eating until you tell them. They come out wonderfully crisp and flavorful—the name says it all. Ingredients for 4 people 500g ground meat (beef, pork, chicken...), your choice. 250ml milk. 2 heaping tablespoons flour. 1 onion. 1 whole egg. salt and pepper (optional). olive oil. Ingredients
- Fresh artichokes.
- One tablespoon of flour.
- Fresh eggs.
- Iberian or cured ham shavings.
- Salt.
- Extra virgin olive oil.
- Garlic and parsley oil.
For the garlic and parsley oil:
- 120g extra virgin olive oil.
- Salt.
- Two cloves of garlic, peeled.
- A good handful of chopped parsley.
Preparation
- To prepare the oil: chop the garlic and parsley very, very finely, mix with the oil and a pinch of salt, and set aside.
- Wash the artichokes, remove the outer leaves down to the white part, cut off the tips, and place them in cold water with parsley to keep them from turning black.- In a pot with water and a pinch of salt, dissolve the tablespoon of flour and bring to a boil. When it starts boiling, add the whole artichokes and cook them, uncovered, for 6 minutes.- Remove them from the water, drain well, and first open the outer leaves, then press down on the artichokes to flatten them.
- Heat a skillet with a drizzle of oil and cook the artichokes on both sides until golden.
