Crispy Cream and Chocolate Pastries

ingredients for 8 pastries 2 rectangular sheets of puff pastry. 1 egg yolk. 1 rectangular cookie cutter, 10x5cm. powdered sugar for dusting. pastry cream: 400cc whole or semi-skimmed milk. 30g cornstarch. 120g sugar. 4 egg yolks. chocolate cream: 150cc heavy cream (35% fat). 120g dark chocolate (chips or chopped).   preparation First, we'll make the pastry cream : Put the milk and sugar in a pot over medium heat. In a separate bowl, whisk the egg yolks with the cornstarch. Once the milk is warm, mix it into the yolk mixture, then pour everything back into the pot. Keep stirring with a wooden spoon over low heat until the cream thickens and coats the back of the spoon. Set aside. For the chocolate cream : Heat the heavy cream in a small saucepan until it's just about to boil. Remove from heat, add the chocolate, and stir until it's completely melted and smooth. Set aside. Cold Tuna Terrine



Ingredients

For a loaf pan 27cm long x 10cm wide x 8cm high (serves 8).
  • 12 to 15 slices of sandwich bread, crusts removed.
  • 300g canned tuna in oil.
  • 24 surimi sticks.
  • Mayonnaise (400g).
  • 4 ripe tomatoes, diced very small or grated.
  • 1/2 roasted red pepper.
  • Cooked shrimp (salted).

Preparation

Line the bottom of an elongated loaf pan with a piece of parchment paper. Place a layer of bread to cover the entire bottom. Spread the bread with mayonnaise and crumble half the tuna on top.
Then add another layer of bread, spread with tomato, and lay down surimi sticks. Repeat: bread, mayonnaise, and tuna. Then bread, tomato, and surimi sticks. Finally, finish with a layer of bread. Press down firmly so everything holds together nicely. Cover the pan with plastic wrap and refrigerate for at least 4 hours.
Once it's thoroughly chilled, unmold by turning the pan upside down onto a serving platter and remove the parchment paper.
Cover the terrine with mayonnaise and decorate with strips of roasted red pepper, shrimp, hard-boiled egg, olives—whatever catches your eye.
