Crispy Cream and Chocolate Pastries

ingredients for 8 pastries 2 rectangular sheets of puff pastry. 1 egg yolk. 1 rectangular cookie cutter, 10x5cm. powdered sugar for dusting. pastry cream: 400cc whole or semi-skimmed milk. 30g cornstarch. 120g sugar. 4 egg yolks. chocolate cream: 150cc heavy cream (35% fat). 120g dark chocolate (chips or chopped).   preparation First, we'll make the pastry cream : Put the milk and sugar in a pot over medium heat. In a separate bowl, whisk the egg yolks with the cornstarch. Once the milk is warm, mix it into the yolk mixture, then pour everything back into the pot. Keep stirring with a wooden spoon over low heat until the cream thickens and coats the back of the spoon. Set aside. For the chocolate cream : Heat the heavy cream in a small saucepan until it's just about to boil. Remove from heat, add the chocolate, and stir until it's completely melted and smooth. Set aside. Chocolate Flower



Just like chocolate bread for an afternoon snack — simple, delicious, and sure to bring back memories!



Ingredients

for one flower, about 15cm in diameter
  • 2 sheets of puff pastry.
  • 100g dark chocolate.
  • 1 tablespoon butter.
  • 1 tablespoon water.
  • 1 egg yolk beaten with a few drops of water.

Preparation

Melt the grated chocolate in a double boiler along with the butter and water. Let it cool slightly.
Preheat your oven to 180°C.
Meanwhile, cut two discs from the puff pastry sheets and place them on a baking tray lined with parchment paper.
Spread half of the melted chocolate over the first disc, then cover it with the second disc.
Spread the remaining chocolate over the top.
Gather the leftover pastry scraps and roll them out with a rolling pin until nice and thin. Cut a third disc and place it on top of the other two.
Using a knife, make cuts in the pastry as you see in the photo, then twist each section outward to create the flower shape.
Brush the pastry with the beaten egg yolk.
Slide the tray into the oven and bake for 20 minutes, or until the pastry is beautifully golden.

Beet Salad with Zucchini, Asparagus, and Pear
